I decided with my wedding and bachelorette party coming up, I wanted to do a 21 day challenge to reset my eating habits, shed a couple of pounds, tone up my body, and just all around feel good. My fiance Brandon is also doing the challenge with me. We are doing the Classic version of the 21 Day Challenge which has two 3 day cleanses during the 21 days. We are videoing our entire experience and sharing them with you on YouTube, Facebook, Instagram, and below.
Here is my Daily Journal with thoughts of how I am feeling and what I accomplished or did. I also tried to do a 21 day yoga challenge. I’ll be updating this blog daily with my thoughts, feelings, and progress. I’ll also be including our videos here too.
I feel horrible. Like what did I get myself into? I’m not hungry, I’m not feeling bad, I am just mad that I can’t have certain foods, alcohol, caffeine, or go out to eat with friends like normal for 21 days! I didn’t go to yoga class I just practiced at home.
Day 2 I still don’t know why I wanted to do this again? I went to yoga this AM so I am feeling good about that. I made taco salads for meal prepping lunches for my fiance and me. I made a rice ramen soup for dinner which is a big hit around here:
Chef V’s Brown Rice Ramen (serves 2 +)
4 cups water
1/4 cup red onion, sliced
3 cloves garlic, minced
1 tbsp. fresh ginger, peeled
1 tbsp. fresh turmeric, peeled
2 carrots, shredded with potato peeler
1 tbsp. organic vegetable bullion
1/2 cup chopped green cabbage
1 serving rice ramen
1/2 cup bean sprouts
1 zucchini, zoodled
Boil 4 cups of water and add onion, garlic, ginger and turmeric. I leave the turmeric whole or cut it in half to boil with the ingredients and remove before eating. Or you can mince it very fine or use a garlic presser and leave in the soup. Once the soup is brought to a boil, add carrots and cook for one minute. Add bullion and stir well. Add rice ramen and cook for 1 minute. Make sure to try and separate the ramen as it cooks after a minute, so it doesn’t stick together. Add zoodles and bean sprouts and cook for remaining 3 minutes. Turn of heat and let cool before serving.
I also made my special “Milk” Shake recipe that is in my new book, Making Cleansing Easier. I did this because tomorrow is the first day of my 3 day cleanse and I can’t have any food let alone dessert. So this is cleanse-approved so I decided to indulge properly!
Day 3 (Cleanse Day 1/3) I actually woke up feeling amazing. Thank goodness that I had those 2 prep days because I wouldn’t have made it on the cleanse had I been in that head space. The first day was a breeze. I was never hungry and always satisfied. I knew by the end of the first day I was going to make it fine on this cleanse. I did miss food, don’t get me wrong, but I definitely didn’t need anything. I had a slight headache at 3pm today, that’s when I was suppose to drink my last protein shake so I did and the headache subsided. I went to yoga this AM so I am feeling good about that so far.
1 x 16 oz Organic Detox Tea
4 x 16 oz Organic Green Drinks
2 x 16 oz Organic, Vegan Protein Shake
1 x 16 oz Organic Detox Soup
Also, I’m drinking lots of water in between these products

Day 4 (Cleanse Day 2/3) Today I woke up at 3am to drive 2 hours away to go on a hike. It was in Borrego Springs, CA and went to watch the wildflowers bloom. They close in the night and bloom with the sun every day. It was pretty cool. It threw my cleanse schedule off a bit, but I was just chugging my green drink and protein shakes before and after the hike. I felt great and full of energy on my hike. I actually feel so good it’s pretty incredible, especially compared to how I felt the first two days, I didn’t think I was going to make it.
Day 5 (Cleanse Day 3/3) Woohoo! I made it! Brandon made it too! We did so good! I feel amazing and light and re-energized. I think the biggest hurdle for me was the mental commitment. Sometimes healthy can seem so daunting, especially when you are in an unhealthy rut. I felt so good today I went to hot yoga this AM then went and hiked Torrey Pines State Reserve. I haven’t had this much energy in a long time!
I was so excited to eat today. I had my detox tea then me green drink first thing this AM. About an hour after that, I made my protein smoothie with my Chef V Ultra Shake. I blended it with kale, avocado, mango, chia seeds, homemade almond milk, ice and my protein. It was delicious and it kept me full until lunch. For my first lunch meal, Brandon and I decided to venture out to Whole Foods Salad Bar. I loaded up with mixed greens, carrots, cucumber, zucchini, jicama, sunflower seeds, pumpkin seeds, and they have a vegan ranch dressing that was so good!
For dinner I bought gluten-free tortillas (made with brown rice, not corn), organic chicken breast, black beans, Daiya vegan cheese, cabbage, enchilada sauce,made guacamole and this delicious vegan sour cream recipe.
Day 7 Today was a good Monday. I went to hot yoga at 7am. I made a delicious smoothie:
1 cup organic coconut water
1 slice pineapple
1 slice mango
1 cup ice
1 tsp. spirulina
2 cups organic green kale
1 serving Chef V Protein Powder
Blend on high for 2 minutes. Top with blueberries, raspberries, bee pollen, chia seeds, and hemp seeds.
I had to go back to work today and my fiance and I decided to venture out to some corporate food places to try and help people decide what to eat out on the challenge. We chose Rubio’s and each had a salad topped with grilled fish. Just ask for no salsa and no dressing and you are all good. I went straight to the salsa bar and loaded up on the free cilantro and onions to top on my salad.
For dinner, I love Amy’s gluten-free and dairy-free burritos. I topped them with grilled chicken, extra black beans, Daiya vegan cheese, cabbage, enchilada sauce, guacamole and my vegan sour cream. It again, was a big hit!
Day 8 Today I am still feeling great. Waking up so early with tons of energy, ready to go! I went to 5 am hot yoga today and felt amazing. I made the same smoothie as yesterday because it was so damn good! For lunch, we decided to try another place that is around most areas so people could piggy back on our orders. We went to Habit Burger and ordered the Garden Salad with Ahi, no dressing and added avocado. It was so good! The salad only has 100 calories, not including avo or ahi. I removed the tomatoes and the croutons to make this 21 challenge approved.
- Side Note: I just watched my 1st day video and my 6th day video and wow what a difference. In my body and my attitude!
I had the best dinner tonight it was so yummy! I grilled some wild salmon and made my cauliflower cilantro rice and topped it with this delicious mango guacamole:
1/4 cup diced mango
1 tbsp. lime juice (about 1/2 lime)
1 tbsp. chopped cilantro
1 tbsp. chopped scallion
Mix and mash them together for this delicious guac topping.
Today was not the best day 🙁 I went hiking at Torrey Pines State Reserve this AM and at the end of the hike, on the beach, the tide was really high and I got stuck in it, broke my phone, got thrown into the rocks, and soaking wet. My arm was gushing blood and my wrist is completely swollen and bloody. Unfortunately I don’t think I’ll be doing much yoga with this guy but hopefully I can stay on track with my diet and get lots of rest.
When I got home from my hike, even though my hand was hurting I was so hungry and just wanted a smoothie. I made the same smoothie as the one I did the two days prior because it was just so good and refreshing. My hand hurt so bad and I had some errands to run, like go get my phone replaced. I decided to go out to eat lunch and save myself the trouble since my hand hurt so bad. I went to my favorite healthy restaurant, True Food, in San Diego. I ordered a kale-aid and the albacore tataki. It was so light and refreshing and just delish. I couldn’t take a picture since my phone was wiped out on the hike.
For dinner, I made the ramen soup again because it is easy, filling and super tasty!
Day 10 Woke up with a horrible throbbing in my arm. Yoga is definitely out of the question which is really a damper for me. I am going to try and stretch as much as I can at home but I am in so much pain. The cut is constantly bleeding and soaking up my bandage. I have a massage today and acupuncture, which I am not going to cancel and just Enjoy.
I didn’t eat lunch today I was so busy I had a smoothie for breakfast, same as the last four days, I think I’m addicted! When I got home I just ate some nuts and had more green drink. I made Amy’s burritos for dinner since my arm hurt so bad and getting heat near it would be miserable. I have an event tomorrow that I am catering and doing my first book signing. I have been prepping all of the veggies and fruits for that event. Day 11 I have my big event today in Orange County at Club Pilates. I am cooking for over 5o people including making drinks, food, desserts, and more. I’ll be signing my new book and just chatting with people about healthy food and stuff. I’ll be eating the foods I prepared including my salmon sammies with guacamole, gluten-free bread, and pomegranate seeds. I also made two types of hummus including my Green Goddess Hummus, a vegan, raw cheesecake, a cashew cream, my nut cheese and so much more! This is what I’ll be nibbling on for lunch and dinner today along with my Green Drink and protein shake.

Day 12 Today I feel great! I woke up after my event and made smoothies for my fiance and me plus our two friends. Then I made my salmon, guacamole and toast recipe from the party yesterday. This recipe is also in my book. I feel great and am excited to be more then half way done with the challenge. I am not looking forward to my cleanse next week but I know it will be good for me.
Day 13 Today I am prepping for the cleanse to start in two days. I am just trying to refocus on my eating schedule after the weekend of traveling, doing an event, being injured, etc. For lunch I had beans, guacamole, lettuce and mangos as a salad.
I just got my phone back today from the insurance company but its not activated until tomorrow, when I can start sharing photos with you again!
I made ramen and veggie soup for dinner tonight. My arm still hurts really bad and cooking isn’t easy or fun. Yoga is still out of the question but I think I am going to retry this week and just take it really easy. I will sub table top for down dog pose to avoid straining my wrist.
Day 14 Tomorrow is my first day of my last 3 day cleanse on the challenge. I had a green drink this AM and a kombucha instead of a protein shake, I just wasn’t in the mood today. For lunch, Brandon and I went to Rubio’s again since it was so good last week. I had the same salad with grilled fish on it again.
For dinner I made this yummy gluten-free brown rice pasta with organic ground turkey, zoodles, and a pesto cream sauce. I mixed homemade almond milk with pesto to make the cream. It was delicious. I made a big pot of it so that it would be our pre-cleanse meal before our cleanse and it will be our first dinner after our cleanse too.
Today is Day 1/3 on my last 3 day cleanse! I woke up feeling ok. My wrist still hurts but I decided to go to yoga today. I just didn’t do down dog because of the pressure on my wrist. I just did table top instead and it worked fine. That seemed to be one of the only uncomfortable poses, plus maybe 2 other, that I just avoided and relaxed and breathed. I am only at lunch right now as I type and I am feeling ok although I have thought about food a couple of times.
This afternoon I am feeling super tired. I took a nap at 3pm, which I rarely do, and I woke up at 7pm and thought it was 7am. I feel my body is just trying to tell me it needs rest and to listen to it. Other then being tired I do feel OK and not deprived.
Day 16 Day 2/3 on the cleanse is not so bad. I think the fact that by day 2, you only have one more day, and you survived the first, so it’s all a head game from here. Although, yesterday I was really tired. Today I am feeling a little tired too. It is interesting because I didn’t have so many detox symptoms the first cleanse but the second one is a little more intense.
I have seen this happen a lot in people who cleanse not long after their first one. The body works in layers and cleansing is like peeling these layers one by one. Each layer might have different toxins and reactions. Some people might not have any detox symptoms on the first cleanse but the second they may experience headaches, dizziness or even nausea. This is completely normal as sometimes our toxins are so deep in our layers that it takes time and dedication to rid our bodies of all the harmful toxins.
Day 17 Today I am a little Hangry, yes hangry! I am not actually hungry, I can stick my stomach out and it feels full, but I just miss food. Its been 17 days and I am ready to eat and be normal again! Although, I do feel incredible, I feel light and full of energy. I slept a lot the past two days and I feel fully energized and ready to take on the world. I went hiking this morning in the same place I injured my arm last week. I felt I had to face my fears. I had so much energy and during the cleanse I like to keep busy so I am not thinking about food. The hike was great and I indulged in a protein shake right after, it was delicious! I am planning all of my meals for the next couple of days. I plan on eating lots of rice ramen soups for the next couple of days to ease me back into normal foods. I haven’t weighed myself through the cleanse, as I don’t even own a scale, but my clothes are fitting super big. I put on shorts and pants and I had to wear a belt with everything. I wasn’t aiming for any amount of weight loss I just wanted to feel good again and I feel great. My stomach feels and looks great, my skin is clear and shiny (in a good way), and I have so much energy and I am excited!
Day 18 I am so happy to have a full smoothie this AM I am having the yummy coconut water based one again! It is so good!
For lunch my fiance and I are indulging in the pesto pasta leftovers from pre-cleanse Day 14! It is sooo good!
For dinner I made the ramen again. Boring, I know, but it is so good, filling, vegan, and my arm still hurts to make anything else!
Day 19 Today my smoothie was a little different because I was out of a lot of stuff. So I threw together
1 cup blueberries
1 cup ice
1 cup almond milk
1 cup green kale
1/4 cup lemon juice
1 tsp. spirulina
1 serving Chef V Protein Powder
It was actually pretty damn good! I am out of stuff today so I am going to the Farmer’s Market in Del Mar to get some goodies like kale and chard to mix in my smoothies. I also need some avocados and fruit for my smoothies. I love getting fresh berries to nibble on in the AM or to top on my smoothies bowls. I am currently obsessed with bee pollen as my allergies have been so bad and I feel it has helped calm them down. I am not a big honey fan because it is so high in sugar. I prefer coconut nectar for its nutritious syrup, plus, I just enjoy the taste better.
Tonight I had this delicious Vegan Alfredo Pasta featured in my April 2016 newsletter. It is so good. You can add grilled chicken for extra protein. The sauce is so simple with just cashews, almond milk, garlic and salt. I used brown rice noodles and zucchini noodles. It’s an easy dish and healthy too. It really tastes like Alfredo sauce!
Day 20 Almost done! I really am not that hungry and have been invigorated to make so many delicious foods. Especially from scratch. This AM I made a yummy smoothie bowl in a mason jar. I added dragon fruit and kiwi for a nice aesthetic look as well as a nutritious boost. This one served 2:
1 cup collard greens
1 cup black kale
1 cup green chard
1 cup blueberries
1/2 cup mango
1 tbsp. spirulina
1 tsp. maca powder
1 cup Chef V Almond Milk
1 cup coconut water
1 serving Chef V Protein Powder
Blend on high for 2 minutes. Top with chia seeds, bee pollen and passion fruit. Yum!
For lunch I went to Whole Foods salad bar and loaded up. I had poached salmon on the side. My salad was a mix of greens, quinoa, zucchini, cucumber, sunflower seeds, kidney beans and vegan ranch. It was delicious! For dinner I made a black bean and quinoa burrito from Amy’s. I topped it with grilled chicken, cabbage, avocado, and enchilada sauce. Yum!
Can you believe it!? I can’t! 21 days later and I FEEL AMAZING! I am continuing to feel this good every day by sticking to everything that I have reinforced for 21 days. Having no gluten, dairy, alcohol, caffeine, sugar and other preserved foods, is definitely life changing. I think the most important thing that I have learned in the past 3 weeks is how much crap is in everything that is out there. No restaurants have organic, use the right oils, don’t add salts and seasonings, or other secret ingredients. Also some things that I always thought were healthy like boxed almond milk I found are pumped with chemicals like artificial vitamins that actually cause cancer, headaches, vomiting, and other horrible symptoms.
Just because my challenge is over does not mean that I am giving up or caving in on food. In fact, I’m meal prepping today to make sure that my fiance and I continue to stay on track. I like to cook a big batch of beans each week to add to salads and burritos. I switch it up between black, red, and pinto. This week I’m cooking black. Cooking beans at home instead of buying cans, is cheaper, saves the environment, and its much healthier. Canned beans can have lots of sodium or added preservatives to keep them fresh longer.
