Chef V’s Easy Garlic & Herb Nut Cheese Recipe!


Made with nuts, this vegan and gluten free spread is great for parties, tossed in salads, or spread on sandwiches. Serve with your favorite fresh berries, figs, greens or gluten-free crackers. Take this healthy treat to your holiday office party and family gatherings and eat clean!


1 cup slivered raw almonds

2 cloves garlic

1 tsp. dried oregano

1 tsp. dried basil

½ tsp. onion powder

¼ tsp. sea salt

¼ tsp. black pepper

½ cup cold filtered water

1 tbsp. cold pressed olive oil


Soak almonds overnight. Drain.

Place all ingredients in a Vitamix or food processor and blend until smooth. This will take a couple of minutes in a processor.

Scrape out the nut mix and place into a colander lined with cheesecloth. Cover with cheesecloth and give a light squeeze.

Refrigerate overnight. Remove the cheese from the cloth. Cheese is now ready to eat, or for firmer cheese, place in a dehydrator for 6+ hours at 115 degrees to form a rind.

Serve with gluten free crackers and veggies. Will keep in the fridge for one week.
