Chef V’s Pumpkin Curry Recipe

Pumpkin Curry

 Pumpkin Curry Recipe:

(serves 2)


1 tbsp. coconut oil

2 cups cubed fresh pumpkin, skinned and seeded

Optional: ½ cup snow peas

4 tbsp. red curry paste (or use my base genep recipe)

1 shallot, minced

1 lemongrass stick, pounded and chopped in half

2 cups coconut milk

1 cup of filtered water


Bring oil to medium high heat. Add pumpkin and snow

peas. Saute the veggies for 3 minutes. Add curry

paste and cover the veggies. Add shallot, lemon grass

and stir. Add coconut milk and water. Let the curry cook

for 5 minutes at medium low heat. Remove from heat

and serve hot with brown rice (optional).

This dish is a special recipe I learned in a cooking class in

Bali on my honeymoon.
