Vegan Sour Cream
Vegan Sour Cream this sour cream is so delicious! It literally tastes like sour cream! I used it last night for cleanse approved burritos and they were a hit! My fiance, who is pretty picky, said to me “I can taste the sour cream, and it’s really good!”
The cashews used in this recipe make the creaminess and the lemon gives it the sour bit. I know nutritional yeast might not be in your cabinet but PLEASE do not skip this ingredient as this truly makes it or breaks it. I bought nutritional yeast from my local healthy grocer, similar to Whole Foods, and they had nutritional yeast in bulk. I only needed a teaspoon for this recipe so buying a whole jar of it would be silly. I suggest trying to find in bulk and if not, the yeast will keep for a while so you can use it later. Or maybe you will like the recipe so much you will make it often! This can be used for nachos, burritos, or any other Mexican-style dish that you want dairy free! Enjoy!
- 1 cup cashews, soaked for 4 hours
- 1/4 cup lemon juice
- 1 tsp. nutritional yeast
- 1 pinch of salt and pepper
- 2 tbsp. water
Soak the cashews in water, in a closed container, inside the refrigerator for 4 hours. Remove the cashews, drain and rinse. Add cashews and all ingredients to a Vitamix or blender. Blend high for 2 minutes or until the consistency is smooth. Remove from blender and serve with your favorite dishes. Will keep in the refrigerator for 3-5 days.
