Kale salad … kale chips and kale everything else is all the rage. But for good reason. Here’s why Chef V is crazy for kale!

Yes, our country is in the midst of a love affair with kale. But is the love affair healthy? Or is it teetering on the brink of obsessive? After all, there’s kale chips. And there’s kale smoothies. Kale burgers (yes, that’s a thing!). Kale noodles. And don’t forget kale butter dip.

As a certified nutritional therapist and organic chef, I think our passion (I prefer that term over ‘obsession’) for kale is, well, healthy. Think about it … what’s better: a plethora of kale salad recipes or a deep frying trend?

I think it’s fantastic that more and more people are hopping on the kale bandwagon.

Kale: Hipster Foodie Heaven For Good Reason

This is a good thing. Kale, as trendy as it might be nowadays, is and will always be one of the most nutrient-dense foods on the planet.

Let’s talk for a minute about nutrient density. What does that mean?

Put simply, it means having the most amount of nutrients (vitamins, minerals, antioxidants, prebiotics) in a relatively small amount of calories.

If you don’t eat that healthy and are looking to do a cleanse, kale is one of the most purifying foods on the planet.

But there’s so much more to kale than just grabbing a handful of the raw stuff to make a kale salad.

In fact, if you ask me, eating a raw kale salad isn’t enjoyable. It simply doesn’t taste good. In trying to make eating healthier easier for the masses, I don’t encourage people to eat foods they don’t enjoy. I’m sorry, but even the tastiest kale salad dressing isn’t going to magically make a kale salad taste amazing.

What exactly is in kale that I decided not use not one but two varieties of it?

For starters, kale is very high in both vitamins A and C. In addition, it’s also high in vitamin K. We’re talking mega-high. Over 600% of your recommended daily value of it. Most people are aware that vitamins A and C are both powerful antioxidants. Vitamin K plays a major role in blood clotting, bone metabolism and the regulation of blood calcium levels. In addition, vitamin K prevents heart disease.

Kale is also rich in minerals. It’s especially high in manganese (over 25% daily value). Manganese plays a key role in metabolism. There’s also a decent amount of potassium and calcium in kale.

Vegans love the fact that kale has over two grams of protein per cup. Granted, you won’t see many bodybuilders eating fistfuls of raw kale after a workout in order to encourage muscle fiber repair. However, if you’re eating a kale salad or blending your own veggies, you’ll get a decent amount of veggie protein.

Where kale really shines as a nutritional all-star is its high antioxidant profile. Kale is without equal in the plant kingdom. You simply can’t find another plant with this many disease-fighting free-radical killers. Because of its high antioxidant profile, kale fights inflammation. It also helps lower cholesterol, thereby helping detoxify the liver.  

Kale Salad … again?

Well, as I say above, raw kale salad isn’t the most delectable dish on the planet. Without doubt, many people eat kale salads simply because they are healthy. But like I say, if you want to make healthier easier, don’t force yourself to eat anything. I like to enjoy everything I eat and drink. With kale, I find that cold-blended veggie drinks with kale taste more enjoyable than eating a raw kale salad.
