Keto diet eating plan means ditching sugar. It’s not easy, but as some of our employees have discovered, sticking to a keto diet can mean loads of body fat melted like butter in a frying pan.
Finally. After 7 years and 15,000 customers later and 1 million Green Drink bottles sold, my own kids are following a weight loss diet plan.
I’m not talking about my own actual kids.
I don’t actually have children of my own, yet. (It’s on the radar with hubby, Brandon.)
But by ‘kids’ I mean all the incredible people working at Chef V headquarters here in San Diego.
Several of our employees are losing weight. And they’re doing it by following a keto diet.
What’s a keto diet? I’ll explain in a little bit.

In all seriousness, Vicki has a stressful job. In fact, she’s probably making sure your order for Organic Green Drinks comes through smooth as silk. And for thousands of other customers.
Vicki has many of the same pain points our customers have:
- Don’t have time to exercise for a lengthy period of time
- Work long hours
- No time to cook healthy meals, much less one healthy meal a day

Can you relate to Vicki?
So how did she do it? Yes, she has Green Drinks. But Green Drinks alone won’t lead to weight loss if the rest of what you eat is junk. Nope, Vicki’s remarkable weight loss is because she’s on a high fat diet. This diet which I mention above is the keto diet.
What’s the Keto Diet?
The keto diet is about 100 years old. It was created in 1924 by Dr. Russell Wilder of the famous Mayo Clinic in Minnesota. Dr. Wilder discovered that a high fat, ultra low carbohydrate diet limited seizures. In many cases, seizures were completely eliminated by dramatically reducing almost all carbohydrates.
When you severely strict the amount of carbs, your body starts burning ketones for energy. Ketones are fatty acids stored in your body. Hence, the name “keto diet.” This same no-sugar/low-carb/high-fat diet not only can reduce seizures, it can help you burn lots of body fat.
That your body can use its own stored fat instead of sugar for energy is the shocking dietary bombshell that Dr. Wilder discovered almost a century ago. And now, more people, including my “kids” here at Chef V are having amazing success with a keto diet.
However, for about 80 years, the keto diet fell out of popularity. There are two reasons for this. First, anti-seizure medications were developed. They replaced the ketogenic diet in the middle 20th century. Second, around the same time, dietary fat became the scapegoat for heart disease. Consequently, high-carb diets became the norm. And to this day, fat continues to be the fall guy for not only heart attacks, but stroke and atherosclerosis. It’s no wonder that obesity has soared because of fat phobia.
It’s only been in the last couple years that the mainstream media has somewhat eased its villainous stance on dietary fat. In fact, in 2015, the federal government’s nutrition experts announced “Cholesterol (which is found in animal fat) is no longer a nutrient of concern.” Yet, experts still urge limiting saturated fat consumption and total fat intake.
Why the Keto diet works
Check out Vicki’s pictures again. Does it look like eating lots of fat is an unhealthy weight loss diet plan? Sure, if you’re eating nothing but bacon cheeseburgers and not eating any whole fruits and veggies, that’s not healthy weight loss.
Moreover, a 1200 calorie diet plan might be all the rage these days. But you could eat a 1200 calorie diet plan consisting of nothing but potato chips. Obviously, that’s not a healthy weight loss eating plan either.
Thankfully, though, because of social media and alternative voices to the mainstream media, high fat eating plans like the keto diet are more popular.
The keto diet involves eating lots of healthy fats. Examples of healthy fats include avocado, olive oil, whole eggs, walnuts and other nuts, low-sugar nut and seed-butters, grass-fed butter and meat, chia-, flax- and hemp seeds, and salmon. Even an ounce of organic cheese is in my opinion a healthy fat.
Along with healthy fat, you eat a little bit of lean protein or vegan/vegetarian protein sources. However, for your carbohydrates, you only have low-starch veggies and a little bit of fruit. You can also have one small serving of a slow-burning grain like quinoa or wild rice. When you follow a keto diet, you restrict carbs to no more than approximately 50 grams per day.
When your body is in a state of ketosis, your body fat transforms in the liver into fatty acids and ketones. Your blood sugar levels drop. In addition, another benefit is your body doesn’t need as much insulin. Insulin is the hormone that escorts sugar into the cells.
Fat doesn’t raise your blood sugar level. Additionally, because fat contains more calories, you don’t need to eat as much of it to feel full.
Chef V Employee Success Story #2: Del, Our Web Dude
Our web guy, Del is also is enjoying success on a keto/low-carb diet.
OK, web guy isn’t Del’s official title, but I can’t explain exactly what Del does. Only that he’s a genius, let’s leave it at that.
So far, Del’s weight loss is 30 pounds. He’s ditching bread, chips and other junk food. Like Vicki, Del is incredibly busy. He works 10 hours a day. Sometimes longer. After spending thousands of hours working on the Chef V website, trying to get our company ranking high on Google for 3-day cleanse, Del decided to give the 3 day cleanse a try.
To be honest, the 3 day cleanse wasn’t super easy for Del. That’s because he went diving in the deep end. All Chef V customers get pre- and post-cleanse diet recommendations.
