Are you looking for a raw vegan meal? Well look no further. This yummy dish takes only 10 minutes to make and its also gluten-free (WIN!). There is no cooking involved so the process is easy. You will just need a couple of tools to get started.
First, you will need a Spiralizer. This tool is amazing to have in your kitchen. It’s easy to use and can spiralize an array of ingredients like carrot, zucchini, sweet potato, butternut squash, cabbage and any other root vegetable.
That is the only main tool you will need. The ingredients used are the most special part. The avocado makes this pasta extra creamy. I added nutritional yeast because it actually adds some flavor and texture the is reminiscent of parmesan cheese! YUM!
1 cup basil
1/3 cup water
4 tsp. pine nuts
2 tbsp. lemon juice
1 cup sliced cherry tomatoes (optional)
1 tsp. nutritional yeast (optional)
pinch of black pepper
To start the spiralizing, follow the directions specific to the spiralizer you have. This should be an easy process. The first time is always a little weird but once you get the hang of it, it’s almost easier then opening a bag of pasta.
Blend the basil, water, pine nuts, lemon juice and avocado in a blender until smooth, I like Vitamix.
Mix the sauce and zoodles together. Add cherry tomatoes, nutritional yeast flakes, and a pinch of black pepper. Voila!
