The Power of Purple

We all know the power of Greens but what about the Power of Purple?

From purple cauliflower hummus to maqui-berry smoothies, putting purple on your plate not only makes for a killer Instagram post, but also big health benefits.

All purple vegetables are extremely high in antioxidants, making them an excellent addition to your diet.

We can attribute the beautiful color to polyphenols, which play an important role in maintaining your health and wellness.

Here are 7 Foods you should add to your diet right now:

  1. Purple Cauliflower: Has all the health properties of white cauliflower, as well as anthocyanin. Anthocyanin offers anti-inflammatory, anti-viral, and anti-cancer benefits!
  2. Purple Cabbage: There is double the amount polyphenols in purple cabbage compared to green cabbage. Polyphenols play an important role in preventing and reducing the progression of diabetes and cancer. They also increase the ratio of beneficial bacteria in your gut!
  3. Purple Carrots: High in antioxidants and anti-inflammatory properties!
  4. Eggplant: Good source of iron and calcium. Great amount of phytonutrients in the skin of the eggplant.
  5. Purple Potatoes: More than 4 times the antioxidants in purple potatoes compared to regular potatoes.
  6. Blueberries: Help improve memory, help improve the condition of the cardiovascular system, and help with blood sugar regulation! Not to mention they are full of antioxidants!

Here are a few recipes to try:

Antioxidant Salad



  • 1 tbsp cold-pressed olive oil
  • 1 tbsp balsamic vinegar
  • 1 large red chard leaf, chopped
  • 1 cup chopped red leaf lettuce
  • 1 small raw beet, grated
  • 1/2 cup rasberries
  • 1/4 cup pomegranate seeds
  • 1/4 cup raw walnuts, chopped

In a bowl, toss the olive oil and vinegar with the greens. Plate and top with beets, raspberries, pomegranate seeds, and chopped walnuts.

Beet-It Smoothie



  • 1/2 cup fresh or frozen blueberries
  • 1/2 cup fresh or frozen raspberries
  • 1/4 cup red beet, peeled and chopped
  • 1 leaf red chard
  • 1 cup almond milk
  • 1/2 cup ice
  • 1 tbsp vegan protein powder, optional

All ingredients should be mixed in a Vitamix for 1-2 minutes, or until smooth. Will keep for 3 days refrigerated.

Berry Blast


  • 1 cup almond milk
  • 1/2 fuji apple, cored and seeded
  • 1/2 cup fresh or frozen raspberries
  • 1/2 cup fresh or frozen blueberries
  • 1 tsp raw chia seeds
  • 1 tsp raw flaxseeds
  • 1 cup ice
  • 1 tbsp vegan protein powder, optional

Process all ingredients in a Vitamix for 1-2 minutes, or until smooth. Will keep for up to 3 days refrigerated.

Creamy Beet Soup



  • 1 tbsp cold pressed olive oil
  • 1 cup onion, diced
  • 3 cloves garlic, minced or pressed
  • 3 cups vegetable broth
  • 3 large beets, peeled and chopped
  • 1 medium sweet potato, peeled and cubed
  • 1 cup unsweetened coconut milk
  • 1 bay leaf
  • 1 tsp sea salt
  • 1 tsp red pepper flakes, optional

Heat the oil in a large stockpot. Add onions and sauté for 2 minutes. Add garlic and continue to cook for 1 minute, or until onion is translucent. Add broth, beets, sweet potato, coconut milk, and bay leaf. Boil for 20 minutes, or until beet and sweet potato become tender. Remove the bay leaf. Transfer to a Vitamix and process in batches until smooth. Add salt and red pepper to taste.
