Vegan Alfredo ordering or making alfredo pasta can make you feel guilty, gassy, sick and bloated. If you are lactose or vegan, alfredo can seem like an option a million years away. I’ve created the BEST vegan alfredo sauce that will leave you guessing if it was really vegan.
To make this sauce creamy, I use raw cashews, soaked in water for at least 2 hours (up to 24 hours). I blend the cashews in my Vitamix with lemon and a little water. I sauté oil and garlic in a pan then add homemade almond milk and cashews. The sauce is creamy and tastes like alfredo, without the belly ache.
If you aren’t vegan but are lactose, you will love this recipe too. I chop grilled organic chicken and add it for my fiancé who loves this dish!
Zucchini Noodles Alfredo (serves 4) Gluten-Free & Vegan!
- 2 large zucchinis
- 4 cups brown rice spaghetti
- 1 cup cashews, soaked in water overnight and drained
- 1 tbsp. coconut or olive oil
- 2 cloves garlic, minced
- 1 ½ cups Almond Milk
- 1 tsp. Himalayan sea salt
- 1 tsp. pepper
Using a zoodler (a tool that makes zucchini noodles), twist the zucchinis to make noodles and set aside. Bring 8 cups of water to a boil to make the pasta. While water is coming to a boil, make the ‘alfredo’ sauce. Blend the cashews (that have already been soaked) in a blender on medium, until they are creamy. You can add ½ cup of almond milk to help blend and make creamy. In a saucepan, heat coconut oil on medium heat and add garlic. Sauté the garlic for one minute but do not burn. Add the cashew mix and stir with the garlic. Turn the heat to medium-low and slowly add ½ cup of almond milk in at a time. Continue to add milk ass the sauce thickens up. You will be able to tell because the sauce gets thick and not watery. When the pasta has 2-3 minutes left to cook, add the zoodles. Stir and continue to cook until done. Drain the pasta and zoodles in a collander. Add the pasta to the Alfredo sauce and cover. Add salt and pepper and stir and serve immediately. Will also keep in the fridge as leftovers for 3-5 days. You can also add grilled chicken to this dish for a healthy chicken Alfredo.
